I like mead a lot, especially after tasting Irene's chocolate mint (uh. . . YUM!) But then I also have to consider the small constituency of local alcoholics who've provided something in the way of material support for this project of mine who are eagerly awaiting the proper time to bottle this. You wouldn't believe the pouting I saw when I told them (to do this correctly) it would take over a month! But that's a month vs. a year. . . that's why we drink beer, and mead's for special occasions. I'll start making meads when I have the luxury of extra carboy space to tie up for that long.
